EVs are advantageoous for in-town driving. When it comes to long-distance driving, they are inferior to ICE vehicles. You will have the following working against you:
Utah summer weather - hot temps rob battery life. AC robs battery life
High-speed driving - extended 85mph driving robs battery life
Limited/inconvenient recharging
I went through this exercise last year because I make this same drive 20+ times per year. It just didn't pencil out. The best choice, and I'm a little sad I sold it, was my Audi A6 TDI that got 44mpg avg per trip at freeway speed, and I could make the 600+ mile round trip without stopping once to refuel if I wanted.
