I bet is simple, strip white wire, black wires
Contect them to switch with ground.

Yeah we have his/her ceiling reading lights right above the head of both sides of the bed with the switches just above

Should be normal and can be used for single pole or three way switch

The switch wiring would not change. Needs to be NEC compliant.
