Faster results. It's used a lot in competitions. Myron Mixon is an advocate for
hot cooks. I make a lot of briskets, and I honestly can't tell the difference between one done on a hot cook and one done on a traditional 225 cook. I think that so much practice has kind of honed of honed my method to the point that I can make it turn out just how I want it even dealing with abnormal variables.
