I carry a credit card with no foreign transaction fees and then purchase as usual
Many card reader wl give you the option of completing transactions in dollars or euros, and in this case you choose euros. No fees.
For walking-around cash I withdraw euros from ATMs. There is a transaction fee from my debit card but I only do that once or twice a trip.
