Probably because Minnesota has had several close games, including

a 7 point victory over South Dakota State, a 3 point victory over Fresno State in double overtime, a 3 point win against Georgia Southern and a 7 point win against Purdue. Utah hasn't had a great schedule (neither has Minnesota), but they are destroying teams.
