Truth be told, Wilson probably wouldn't have started over Huntley in his first two years.
Wilson was hurt and/or inconsistent in those years, whereas Huntley was good enough to get an NFL invite, where it looks like he'll stick.
Clearly Wilson this year was better than Huntley ever was. But 2018 Huntley vs 2018 Wilson or 2019 Huntley vs 2019 Wilson? That probably ends up in favor of Huntley (assuming the focus is on winning games then, not on developing for the future).
And without those years of experience of experience, there's a good chance 2020 Zach Wilson isn't the guy we saw last year.
If he'd gone to Utah, he wouldn't have had the same opportunities. He wouldn't have developed the dang. He might not have seen the same weakness that led him to go see Beck. And it wouldn't have been scheme or coaching or opponents that held him back, it would have been the arguably correct decision to put the best team on the field.
This is why (especially at QB where there can be only one) I'm shocked more folks don't go where they can get a starting job - especially with the portal now making it easier than ever to play a year or two starting at Nevada and then move to a high profile school for the end of their college career
