Not sure it would be legal... but you could do it.
I worked with a guy that bought a small chunk of land out in the middle of nowhere (duchesne county, ut). He built a 16'x12' mini-cabin about 300 yards from the closest paved road (He picked that size because it wouldn't require any building permits). He setup solar panels, an array of batteries (battleborn) and a large water storage tank...

He 'retired' from his job and has been living 'off the grid' for the past two years.

There is no reason to think you couldn't do the same as long as you are not found.
