For that event, they planned on 5 pounds of fresh potatoes per person
The reception was for one of my cousins who was involved in much of the Burley HS athletics and Cassia County Fair events, so she invited a bunch of people. The decision to keep the menu simple was due to the sheer number of people they expected. The reception was held at the fair grounds.
They actually ran out of potatoes, probably could have cooked another 2 tons if they had them on hand.
