Pay no attention to time or finished temperature.

I learned from Cam at Bam Bam's BBQ.  It's done when it's done.  Put a probe in and when it goes in like butter it's done.  It could be anywhere from 195 to 205.  Use your temperature probe to get you to about 195 and then start checking by probing it every 15-30 minutes.
