I've been pleasantly surprised at how flexible the process is.
Starting up everything I read it watched stressed how down to the second or gram everything had to be to get great bread.

Over time I've found out, due to various scheduling conflicts, that there is a lot of wiggle room and you will still get great bread!

Those boules look tasty!
