The flat is the leanest part. Pellet smokers in cold weather take more fuel and
Move more air so a lean cut will dry out faster. Insulate the pit if you can.
Wrap in paper at maybe 150. You have all the smoke it will take by that point.
Full disclosure I avoid smoking flats because I really like the flavor and moisture that comes from the point.
