Grazing vs farming
Having driven westward across the country this summer the land slopes upward as the plains transition to the great plains and then to the mountains. At a certain elevation the land use changes from farming to grazing. The grazing economy uses much fewer people.

Also, the manner of farming and crops grown changes at higher altitudes.

As you go west towns are spaced further apart. Till you get to west Nebraska and beyond and there is just open space.
