I think if Disney would have done it this way it would have been convincing.

These guys were recreating everything based on what they saw. Disney could have gotten all the light exactly with the other characters in the scenes. Add in better costuming, access to high res photos of Luke from ROTJ and an actor that looks close enough to Mark Hamill (either in straight looks or prosthetics) and I'd bet Disney could pull of something pretty close to real. Plus watching the "Making of" Mandalorian Season 1 they have the tech to do it.
