You just have to layer well. The hardest part is your hands because you have to be able to feel the line but your hands
will get wet from stripping the fly line in. My system is to use somewhat thin wool gloves with nitrile gloves over them to make them waterproof. Works pretty well actually.
As for the other question, I’m always the alpha predator when it comes to trout 🤣 Seriously though, you don’t want to out your hands in the mouth. They won’t cut you up like a pike will, but the teeth are enough to make you bleed for sure.
