They’re an expensive cut for good ribs, take up space.
They’re a big thing in Texas but most try to offer it as a special once a week or something like that. I think Franklin’s offer only Saturday’s. Just can’t make enough of a profit compared to brisket, spare ribs, pulled pork. But it reduces pit space of those other higher margin products.
