with figuring out how to cook with cheddar cheese, I'm reminded that many of the appointed top chefs in the world are 1. Wusses 2. Haven't really branched out food wise even personally, and 3. should just be thought of as "all-world" at whatever their narrow focus is. I'm pretty confident that given a competition where you have to make a really broad range of types of food and specific ingredients that I could beat out a decent number of them. The ones that win are the ones that are more well rounded and stop complaining and just cook.
