Go to Damascus gate and hire a cab to go to the places the tours won't take you.
Hebron (can be done the same trip as Bethlehem). You must visit the tomb of the patriarchs. It's like you haven't really been there without that. The market street was something else. The shopkeepers talking smack about each other in broken English to get us to buy from them instead of the other guy was cool, the zionists dropping their trash on us while we were shopping was not. Still an incredible experience getting to see the settlers interact with the people who have lived there for millennia. If you can go on one of the tours that take you to both a local palestinian's home and a recent zionist settler's home. Eye opening.

Nablus (can be done the same day as Jericho). Make sure you see Jacob's well. It's really the only place you can be certain the savior walked/sat down/drank water. The rest are all guesses. Mt Gerizim and the samaritan temple and village are pretty awesome as well. I was never able to get in to Joseph's tomb. We went there twice, the second time with the permission note we thought they told us to get. Oh well.

Also eat some kanafeh. I'd go back just for that. There was this incredible place off the main street in Nablus our driver took us to. We also ate some with the shopkeepers in the muslim quarter near our hotel at Ecce Homo. Being with the people is the biggest thing for me. Remembering they are all children of God was the best part of the trip. Seeing how different people worship Him was great for me and my kids.

Fishing on the See of Galilee was great. We chartered a replica 1st century boat for $120 for a few hours. When we were coming back I was telling my kids about John jumping out of the boat when he saw the resurrected Lord on the shore cooking fish, my 9 year old, asked me why I didn't jump out and swim to the shore. I told her if I saw Jesus had a barbeque going for us I'd jump out just as fast as any apostle. You'll come home with awesome memories.

The east bank of the river Jordan is awesome. Take the bus from Nazareth to Amman if you can. 10 days is too short. Have a great time.
