What time should I start smoking a 12 lb brisket to be ready by 5 pm tomorrow?

I'm guessing around 11 or 12 tonight? Planning on wrapping in the morning.

Totally depends. The way I smoke, I would have started at least 4 hours ago

Yep, I’ll often rest it for 4+ hours. Two weeks ago was 8 hours. Tasted awesome.

Don't wrap until it's ready. But starting at midnight will give you time to rest
