You then smoke it for an hour at 275 and then rotate them and cook for another 45 minutes (that's how my brother told me to do it). I adapted it and cooked them at 300 instead of 275. I personally like my bacon crispier so I bumped it up to 350 for an additional 20 minutes.
They still ended up really juicy though. I was afraid they'd be dry but they aren't.
