Ordering Strategy
I like this itinerary. Do you like the order you have it in? I think it is reasonable. When asking about how to order experiences, I have a travel tip that has helped me plan a ton of great trips w/ my fam: prioritize the "essential" activity first.

Once, when I took my then-wife to Paris, we created an itinerary where, for whatever reasons, we didn't go to the Eiffel Tower until the second-to-last day. She'd never been to France. We had a great time, but she spent some time worrying that circumstances would conspire to prevent us from getting to the tower. I also had that lingering in my mind. I wish we would've gone first so that we could be a little more relaxed about the other activities.

Since then, we always prioritize the "Eiffel Tower" of wherever we're going. Once we do that, we can breathe easy that a main, unmissable objective has been accomplished.

Identifying what "it" is also helps with planning. For Disneyland, it was the star wars ride (or Peter Pan, when I'm going w/ my ex). Just e.g.

For Hawaii, arguably, the PCC or a Luau would be that (at least for our fam).
