take them to one of the many fish hatcheries in the canyon to see how fish grow and change throughout their life cycle. It's a really cool experience, and the folks that work there are very friendly and knowledgeable. The last time I took my kids, the people there actually allowed my son to open a gate and move a couple thousand trout from one runway to another. You might even get to see some sturgeon. Also...just driving through the Canyon and seeing all the water is a very cool experience. Of all the springs in the canyon, my favorite is Niagara Springs which is South of Wendell. Malad Gorge is also a pretty cool place, and it's not far from Hagerman.
