So many reasons for this. First, what if she'd died when she was almost swept away by the wave? Well, dang, flew all this way, have all these embryos, but nobody to cook'em. But seriously, if she'd died (or become infertile or unable to carry) from sickness, old age (the whole relativity thing in space travel), or whatever else, that was it. No more species.
But second, wouldn't you want more than one "incubator?" At the rate of 1 new human per year (at best) for a period of maybe 10 years before menopause, this repopulation thing could take a while.
You'd still want at least a couple of guys if for nothing else than to do the grunt work, with at least one trained in survival and civilization building. But if your ultimate goal is to convert a couple hundred embryos into humans, seems you wouldn't want to put all those eggs into a single basket.
