Trying a new dry rub this year. Will spritz the ribs with apple cider vinegar. Apple juice will be in the water tray of the smoker. I'll use apple wood of course.
I'll put them in the smoker at 3am as I'll smoke them for about 9 hours.
I've got a brisket in there now that's been in since last night. It'll be done in a few more hours for pre-Thanksgiving dinner. Rhodes rolls are rising and some cole slaw will be had as well.
We're doing Thanksgiving with some neighbors and they want me to smoke a whole turkey too. I'll use Pecan wood for that and that will only take about 3 hours. Need to start the brine soon as the bird will sleep in that tonight. Hope nobody steals this bird. I'll leave it on the back porch in a cooler in the brine. Last week I left a turkey on the front porch for the food drive and it was gone when they came to get it.
