Insurance companies assume your teen will drive all of your cars.
Realistically, there is no way for them to guarantee that your teen will not drive the more expensive vehicle. I'm sure they could simply deny coverage if they have an accident in your car, but I bet this would create too many problems for them legally. Most providers just decide to group all drivers and all cars together.

Someone above mentioned using a different provider just for your kid. That would probably work, actually.
