1 (1/4 ounce) package active dry yeast (2 1/4 teaspoons)
3/4 cup warm water (105 to 115 degrees F)
2 cups bread flour plus additional for kneading and dredging
1 1/2 teaspoons salt
2 tablespoons sugar
3 teaspoons olive oil
Mix 1/4 C of the water with the yeast and an additional teaspoon of sugar to proof. Mix the dry ingredients, then add the wet, mix and knead for a bit, cover a let rise like 2 hours, then you are good to go. Baking it hot (500+), and a well seasoned pizza stone make a difference as well.
I'll second the recommendation on using provolone. Costs more, but it's really good.
