Meh. Offer them a month's severance in exchange for a letter of voluntary
resignation and a release of all claims. Employee gets a month to get on his or her feet and prevents them from filling unemployment and filing a wrongful termination or other goofy claim. Assuming you don't have mass turnover, you'll come out ahead on something like this.
