Utah is now perceived as the "big time" football program in the state, and...
BYU isn't anymore. BYU used to be in the '80s and they dominated fan base growth and clothes sales in Utah then - even in the Salt Lake Valley. But now Utah has taken over that position, mostly because they are in the Pac 12 (and competitive there), and partly because they got into and won some major bowl games during their last years in the MWC.

People want to be identified with the "big time", so Utah will continue to outgrow BYU in fan base and recruits.
