How do other non-P5's do with similar strength of schedule?
Take any 20 slots better or worse than BYU and compare their records

Rnk W/L Team
52 2-10 SMU
64 5-7 East Carolina
67 9-3 BYU
68 9-3 Memphis
69 6-6 Connecticut
71 7-5 Cincinnati
72 6-6 Utah State
73 8-4 South Florida
74 0-12 Central Florida(UCF)
75 9-2 Navy
76 7-5 Western Michigan
77 3-9 Tulane
78 3-9 Fresno State
79 1-11 North Texas
80 3-9 Ball State
81 6-6 Tulsa
82 2-10 Wyoming
83 9-3 Bowling Green
84 1-10 Missouri State
85 10-2 Temple
86 9-2 Toledo
87 3-9 UNLV

Another thing there are 21 P5's with harder schedules that are going to finish below .500.
There are 6 more that are right at .500.
17 others with worse records than BYU and 5 with the same record as BYU.

44 of the teams with stronger schedules lost more games. By losing a lot of those games they therefore make their schedule stronger.

17 teams with greater SOS have better records than BYU.

Here are the 20 P5's just above BYU.
Rnk W/L Team
45 5-7 Nebraska
46 10-2 Florida
47 12-0 Clemson
48 6-6 Arizona
49 8-4 Washington State
50 3-9 Boston College
51 4-8 Rutgers
53 11-1 Michigan State
54 7-5 Penn State
55 4-9 Colorado
56 6-6 Indiana
57 10-2 Florida State
58 9-2 Baylor
59 9-3 Georgia
60 5-7 Kentucky
61 11-1 Ohio State
62 12-0 Iowa
63 11-1 North Carolina
65 7-5 Duke
66 7-5 NC State

BYU did OK with their schedule based on what I'm seeing. Did this turn out to be BYU's toughest schedule - not by these metrics. But they certainly did fine with it when comparing to many other in/out of P5's.
