A lot of it comes down to preparation. Meyer's coaching tree does great in bowls, rivalries, and big games, but drop a lot of games they shouldn't. My guess is they roll the dice by spending practice time before playing "lesser" opponents on the games they have circled. Players calling out specific plays ahead of time has nothing to do with motivation.
