I can't remember which company we used, but we really enjoyed it.

For the dolphins, they had various levels, depending on how close you want to be.

Big boats: so not very bumpy, cheaper, food on board.
Little boats: closer to the dolphins, bumpy, more expensive
IN the Water: snorkeling right there, really really expensive, but I imagine amazing.

I don't know the schedule, but I think the Whales are probably gone or almost gone at this point, but you might still try. Longer excursion to go further out. I also hear Maui is actually better for Whales.

Finally, I'll throw in we LOVED PCC. Yeah, it was very touristy, but very fun.
