The orange lines outline the BYU-owned land including the Materials Handling Area (MHA) to the South of the country club and the driving range that is currently leased to the country club, and the intramural fields across University Avenue. I have also overlaid (to scale) LES plus the current West and East parking lots, and as you can see, it would be a pretty tight fit, but might be doable.
They could probably design the stadium to have a steeper angle for the seats (current LES has relatively flat & wide seating) to shrink the footprint of LES 2.0, and there might even be more parking than in the current location (there's also parking to the South of the intramurals field at BYU Outdoors Unlimited building).
The biggest problem I see is that with the Riverside Country Club bordering on the West and North, it would be harder to actually get to the stadium because you could only access it from two sides (East & Southeast) and all of the game traffic would be funneled into those areas.
