I think when considering each's best the issue lies in the potential.
BYU has really high potential as does Yewtah (and many other CFB teams). BYU's problem has been injuries, HC/team rule violations, coaching blunders, etc. Was BYU at their best when they missed 3 FGs in a row, when we decided to go for 2-pt conversion by selecting a sole rushing play with numerous other play calls (i.e., RPO), when they laid an absolute egg in the first quarter in the Las Vegas bowl giving up so many TOs "that they could not be counted", or when we were cruising for a win last year only to fall on our faces after half our defense and our 3rd string RB went down?

The rebuttal, of course, is that we may never have even sniffed the win had Yewtah been playing their best. However, the reality is that the ceiling for both these teams, as most, at this time of year is near equivalent while the probability of reaching one's ceiling is quite different due to depth of talent, experience, etc.

Does Yewtah have a greater probability of winning? Yes, but if they both play their best games then it's a toss up. In this instance, you can either say it's a glass half full or empty. I'm glass half full kind of guy--BYU wins it.
