Sounds amazing! I love the meatloaf at R&R because it is smoked and wrapped in bacon, but this sounds even better.
I also love the meatloaf at Franck's in Cottonwood, but it is a totally different style using more shredded meats and topped with a blueberry rosemary sauce. With that said, Gouda, mushroom, bacon...sign me up.
