About the butchering, it’s really not that hard to do it yourself
I’m a year ahead of you - I started hunting last year and got my first deer. I followed the advice of Cougarbib and got that thing gutted quickly and clean. I hung it in my garage for 3-4 days, bought some plastic table cloths, and butchered it right in the garage. It wasn’t hard at all. I used this video to show me the ropes:
For the worse cuts of meat, we bought some pork shoulders and ground them up with the venison - about 33% pork.
We really have loved the meat this last year. My wife was pleasantly surprised how good it was. I made a bunch of jerky initially, planning to make more later, but we enjoy the roasts more than the jerky.
