Years ago people cooked french fries, among other things, in beef tallow. McDonalds used a mixture of beef tallow and other cooking oils. Which is why fries tasted so good.
"Scientists" decided that using beef tallow to fry up stuff was extremely heart unhealthy. So people and restaurants, including McDonalds, quit using beef tallow for frying anything. Restaurants and the general public switched to other cooking oils for health reasons.

Stores for the most part quit carrying lard (similar to beef tallow) because most people quit using it.
Apparently some people believe that cooking with beef tallow is healthy so there is some disagreement.
