Yep, although I don't think you need a full quarter, 8-10 minutes should be fine
For an OT period. Going for 2 every time is good. I would also kick off every OT period with 1 team receiving in the first OT and the other receiving in the 2nd and 3rd if it goes that long, and continuing snake style.
