Recipe
I was given a recipe but have just modified from the original. I adjust depending on how many I’m feeding.

Pinto beans (3 cups), cover beans in large pot with water about 2” above the beans and let soak overnight. I rinse the beans and replace water before cooking.

One one diced

Fresh garlic cloves (about 6)

Ham hock with bone (Harmon’s or any good meat counter has them, just ask)

Salt and black pepper to taste (I add a lot of pepper)

Cook about 4 hours on medium heat (slow boil) stirring occasionally. They are done when the consistency starts to thicken. I usually continue to add water a couple of times during the cook.
