We did that here. Had the younger boys teams playing in girls tournaments for a while. They got killed because most girls had been playing the sport for several years at that point.
After a two years, the girls won't play the boys because they get killed. Finding other boys teams to play is tough (as most require 5-8 hour drives)... but once you have a handful of teams in an area at each skill/age level, then they can play each other between tournaments.
We also have our boys teams play in men's leagues to play against better competition.
They are still losing most of those matches, but they are improving.
