wow, that gives me a great idea. Ever had buttermilk syrup?
I make buttermilk syrup all the time for our pancakes and waffles, but I like to add other flavorings like orange, coconut or rum extract. I've also made a quick syrup with fresh raspberries and added that. It ends up being a raspberry cream, or orange cream, etc. and it's extremely delicious.

So right now I'm thinking apricot cream syrup, with buttermilk syrup as the base. That sounds really good.

In case you'd like to try it too, here's the base recipe:
2 sticks of butter
1 c. buttermilk
2 c. sugar
1 t. baking soda
1 t. vanilla

Starting with a 3 qt. saucepan (because it will foam up quite a bit and overflow), melt the butter over medium heat. Then add the sugar and buttermilk, stirring constantly until it just start to bubble. Pull off the heat and add the baking soda and vanilla. Stir that in well, and watch it foam up.

At this point I add the other flavorings, and this is where I'm going to try the homemade apricot jam or syrup. I'll start with about 1/4 c., then add more as needed.
