I shot one in high school and we didn’t skin it for a couple of days (we were quite a ways from home) and DANG was it gamey. Nobody in my family wanted to eat it, and we grew up on mule deer & elk, so we were not new to venison.
A friend of the family told us that you have to skin & debone them right after you shoot the animal, but I’ve never shot another one to try it.
