Another reason for game development taking so long is that in recent years they
have had to do away with overtime crunch, which used to be accepted as a part of the job in the industry, but became a focus when Blizzard was going through their crap. Developers used to be able to rely on having employees working crazy hours (many of them with no extra pay) leading up to the release of a game to meet deadlines and squash bugs. This is now frowned upon and not nearly as common or intense as it used to be. Developers are having to adjust expectations without relying on crunch to polish projects. Unfortunately, this has lead to longer development times, and releasing games in more unfinished states, leading companies to rely on gamers to find and report bugs, leading to frustration on both sides.

There's no real easy answer to this as gamers become more frustrated with longer release times and buggier games, but devs are starting to demand less crunch and more relaxed working environments.
