Agreed. I've done some steaks that went too long. But I usually start with
something a bit less chewy than chuck.
Sirloin comes out great after just a couple of hours, so I figure 4-5 for chuck would be good.

Chuck steak is best at 24-30 in my opinion. Other steaks 1-2 hours.
