Gotta do Delicate Arch. Carry the kid on your shoulders. Morning is far less
crowded and much cooler, sunset is very crowded but the lighting is better. The morning lighting is just fine though. It is over exposed sandstone most of the way, so pack plenty of water, and just go in the morning. 3 miles round trip. Make sure you check out the rock art panel a little north of the trail.

As others have said, Devils Garden can be long. There is a full primitive loop which is seven miles. You can hit the best stuff without the primitive loop, though. At the very, very least, make the 2 mile round trip to Landscape Arch. Incredible arch. See it before its inevitable future collapse. If you are feeling spunky, continue on to Double O Arch. It is a 4-5 mile round trip from the parking lot to Double O. It is an easy trail, though with a kid, there is one portion where you have to make a very short descent down a fin--not hard--but it is an obstacle in the path. Great views of the surrounding area, of the "fin" formations, and some other arches along the way. The primitive loop continues on from Double O and winds through the fins back to the start of the trail, but it adds on extra miles. Great hike, but with a kid, I would skip it. If it came down to it, I would skip Double O too and just do Landscape.

As others have said, make sure you go to Sand Dune Arch; your kid will love it (and so will you).

Visit the Windows Section. Four incredible arches and they are all basically strolls from the parking lot.

Don't limit yourself to Arches. Visit the Island in the Sky District in Canyonlands National Park too. Stop at the Shafer Trail Viewpoint, hike the 1/4 miles Mesa Arch hike (do it; you've probably seen the arch a million times on motivational posters), stop at Grand View Point and Bucks Canyon viewpoint. If you want another hike, hike to Upheaval Dome or just hike along the cliff's edge at Grand View (and hold on to your three-year-old for dear life--the hike is very, very safe, but there is no rail except at the main viewpoint area.

Dead Horse Point is awesome, especially in the morning.

As someone else said, there is neat stuff downstream on the Colorado River. The Corona Arch hike, if you are not hiked out, is one of the best in the area. About 4 miles round trip.

All of these hikes are better in the morning when it is cooler. If it is hot, I would drive to Canyonlands, as most of that can be done from the car.

I love Moab. If there were gainful employment there, I would live there.
