There is also a program called Phoneview, if you use a Mac, that allows you to look at the contents of an iPhone backup and archive texts, call logs, etc. http://www.ecamm.com/mac/phoneview/

There are apparently some additional methods that are more direct, but they require jailbreaking your phone.
