Sometimes things with their verbal commit school change in that time as well (team gets better/worse, coaching changes, etc.)

Plus for those that get better as they get older and end up highly rated as a senior, the often get big time names that come calling that never expressed interest before. Hard to fault a kid for taking one of those offers when they come up.
