but the rest were foreign. I'm sorry, but fish and mutton should not be included as bbq, and some of these must not be known outside their own neighborhoods. IMO the best bbq requires beef or pork smoked with oak and mesquite. Sauces can vary, but are not necessary. I suppose that sounds mostly Texan, which is probably true.
