Very sad. If you have to stay close to Utah, I would take him to Hamilton,
get in some baseball games. Get some good sunrises and sunsets in beautiful locations in the mountains. Go fishing, get a helicopter ride. If he can travel, I would go to a few cities he has never been, eat at the best restaurants and see some national parks he hasn't seen.
