What is the benefit of that type of cooking?

Have never done that, and not sure I have ever eaten something cooked that way that I know of.

Is it worth it to get the WiFi one? Do you need to change temps very often?

No. It's a feature that you might use once every 10 times you cook

I use it for delayed cooks. I can put food in an ice bath and then start the cook whenever.
