Washington does play Auburn, but Wisconsin plays New Mexico and Western Kentucky
That is just one single team from the SEC and no teams from the Big 12 or the ACC between both of those teams. I don't think Washington and Wisconsin would necessarily be a shoe-in either depending on how the other conferences did. In addition to trying to win a spot from Washington and Wisconsin (who would have excellent resumes with conference championships to end the year even though you beat them head to head), you would most likely have teams such as Alabama, Georgia, Clemson, FSU, Miami, Oklahoma, Notre Dame, etc to worry about as well. I'm sure I am missing others. Head to head is important to the committee, but not the only deciding factor. I believe that any of those teams undefeated or even with 1 close loss probably get in over an undefeated BYU. I can even picture some rare cases where a 2 loss SEC team gets in over an undefeated BYU this year if the circumstances are right.

I do agree with you that it would be absolutely criminal to get left out this year, but I think it is likely they still would. I think we can at least agree on this: It may be technically possible for BYU to get a playoff spot for going undefeated this year, but it is in no way guaranteed and in fact quite difficult to actually get in even with this schedule this year.
