Because a New Orleans Jazz note is so much more Utah than a mountain outline.
Yes, I know. They're the Utah Jazz, not the Utah mountains. But I don't care how long the Jazz are in Salt Lake City, the name just doesn't work for me. To me, the name, "Jazz" is more awkward than if we were the 76ers.

There's no such thing as "the correct purple." Purple is ugly. It looks bad on Weber State, and it looks bad on Utah.
